Freeze-dried durian: what it is and how to choose a good bag

How freeze-drying works, why it suits durian, why it costs more, and five things you can check yourself on any bag of dried durian.

Freeze-dried durian: what it is and how to choose a good bag

Freeze-dried durian is durian pulp from which almost all the water has been removed by freezing it and then turning the ice straight into vapour under vacuum. In Vietnam the same product is sold as "sầu riêng sấy lạnh", "sầu riêng sấy thăng hoa" or "sầu riêng đông khô"; in Chinese it is 冻干榴莲. One trap for buyers: the Vietnamese word "sấy lạnh" (cold drying) is also used for low-temperature heat-pump drying, which skips the freezing step and gives a different product. This article explains how freeze-drying works, why it suits durian, and five things a buyer can check on any bag.

How freeze-drying works. Utah State University Extension describes three stages: the fruit is deep-frozen; it is placed under vacuum so the ice sublimates, going directly from solid to vapour without melting; finally gentle heat draws out the remaining water. Because the water never passes through a liquid stage, the cell structure does not collapse the way it does in hot-air drying. The durian keeps the shape of the pod and becomes light, airy and crisp.

Why durian suits freeze-drying. The first reason is aroma. In 2017 Martin Steinhaus's group at the Technical University of Munich reported in the Journal of Agricultural and Food Chemistry that durian's signature smell comes mainly from two compounds: a fruity ester and a sulfur compound with a roasted-onion note. Both evaporate quickly under heat, so the less heat a process uses, the better its chance of keeping the aroma. The second reason is colour and freshness. A 2020 study by Huynh Bao Long and Nguyen Thi Hong Minh (Ho Chi Minh City University of Food Industry) noted that peeled Ri6 durian loses quality and its natural yellow colour within about 24 hours, even when chilled, and that other drying methods change the fruit's structure and appearance; this is why the authors studied freeze-drying.

Five checks on a bag of dried durian. One, the ingredient list. True freeze-dried durian needs only one line: "durian 100%". Vegetable oil on the list usually means vacuum-fried durian, which is also crunchy but is a different, higher-fat product; sugar means the fruit has been coated. Two, the crunch. Freeze-dried pieces are light, snap cleanly and melt slowly in the mouth. Chewy or leathery pieces were heat-dried or have absorbed moisture. Three, the colour. A shade close to fresh durian pulp is a good sign; dark brown points to high heat or oxidation. Four, the packaging. Freeze-dried food is strongly hygroscopic. USU Extension says properly freeze-dried food reaches a water activity of about 0.3 or lower, and recommends packaging that blocks oxygen and moisture, without clear windows. A foil-laminated pouch is the right choice. Five, traceability. The bag should name the producer and show production date, expiry date and, ideally, a traceability code verified by a third party.

Why freeze-dried durian costs more. The first reason is weight. USDA data list 5.3 g of fat, 27.1 g of carbohydrate and about 1.5 g of protein per 100 g of durian pulp, which means roughly two-thirds of the weight is water. After drying, almost only the solids remain, so by our estimate a 50 g bag corresponds to about 140 g of fresh durian pulp, before counting husk and seed. The second reason is time: USU Extension reports that a freeze-drying batch typically takes 20 to 40 hours, longer for sugary foods. Our article Freeze-drying costs more — but where does the cost go? covers the economics in more detail.

How to eat and store it. Eat it straight from the bag as a snack, crumble it over yoghurt, ice cream or cereal, or give it as a gift, since it is light and keeps well. Reseal the bag right after opening; Green Chips recommends finishing it within 3 to 5 days, because the pieces absorb moisture and lose their crunch. A 2009 study in Food Chemistry (Maninang et al.) found that durian extract inhibits the ALDH enzyme (tested on a yeast enzyme), which may relate to the discomfort some people feel when eating durian with alcohol, so some caution is sensible.

Green Chips freeze-dried durian. Our durian is made by freeze-drying. The only ingredient is 100% durian, with no added sugar, no preservatives and no colourings. It is packed in a multi-colour printed PET/AL/PE foil-laminated pouch with a 12-month shelf life from production, and carries a VeriGoods stamp for traceability on the system of Vietnam's Ministry of Industry and Trade. It comes in 30 g and 50 g packs. For importers: HS code 0813.40, exported through official channels to China under GACC registration CVNM31012404300113, with quotes on FOB or CIF terms.
